Today, for instance, I stumbled upon this website detailing the agenda for the upcoming Great Lakes Water Conservation Conference.. for craft brewers and cheesemakers. “With many water utilities in the Great Lakes region increasing fees by 25 per cent or more in the next year, the conference will pay for itself through practical systems for water savings,” states the site. The sector recognizes that Great Lakes region water policy will be changing in the coming years, and that the Great Lakes Compact requires all water-intensive businesses (including craft brewers and cheesemakers!) within the watershed to implement conservation practices. These businesses are beginning to get it—water conservation can help save both money spent on water services, and the very resources upon which their profits rely. Presentations and panels at the Madison, Wisconsin conference, reads the site, will cover systems for water conservation, water auditing, rain water harvesting, wastewater treatment and recycling, water science behind the Great Lakes Compact, waste to energy installations, and CIP processes for both brewers and cheesemakers. Hi, Kerry – Thanks for your post – what sets this conference apart is that it is an all-volunteer conference, subsidized in part by sponsorships to keep the registration affordable for small craft brewers and specialty cheese makers. Even the smallest operations can tweak their systems to recapture and re-use water. One brewery, Flying Fish Brewing Co. attended last year and now saves 1,000 gals water/weekly which can be re-used as rinse water for filled bottles before labeling. Also, though the conference began due to the imminent regulations of the Great Lakes Compact, attendees come from as far away as California, Colorado, Kansas, Virginia, etc.
No breweries or cheesemakers from Ontario have signed up yet – but Stephen Beaumont, a Canadian beer expert and author, included it on his blog, worldofbeer.com. Cheers and hope you can make it to Madison!
